Kitchen Setup & Equipment Notes

The class is designed around a standard home oven and a basic roasting pan. A probe thermometer is strongly recommended but not required — we cover visual cues and timing fallbacks for every stage of the roast.

Oven Calibration & Temperature Accuracy

Many home ovens run hot or cold by 15–25°F. Lesson one includes a simple calibration test using an oven-safe thermometer, so you can adjust your dial or rack position before the holiday cook.
